Cooking Matters with Diabetes

CSU Extension Website

Do you or a loved one have diabetes? Have you been told that you may be at risk of developing diabetes? Diabetes is a national health concern. Information obtained from the Colorado Health Department finds that in the Southeast region 10.5% of the adults have been diagnosed with diabetes, Otero County 12.4%, and the state of Colorado 5.9%. Diabetes is a major health concern for Southeast Colorado residents as statistics show that the incidence is double the state rate.

Learn to identify and prepare healthy food options by attending the Cooking Matters with Diabetes class. Participants will learn how to use healthy eating and physical activity to maintain blood sugar levels. During the classes the participants will cook a dish and each household will take home free groceries and cooking utensils to practice the dish at home.

Cooking Matters with Diabetes will meet once a week for six weeks in Rocky Ford and Las Animas starting the week of March 4 from 5:15 – 7:15 p.m. Las Animas classes are on Mondays and Rocky Ford classes are on Tuesdays. Registration is free, but pre-registration is required by February 13. For more information or to register for Las Animas call 719-456-0764 and for Rocky Ford call 719-254-7608. Class size is limited.
